Fresh Watermelon & Feta Salad
Ingredients:
4 cups seedless watermelon, cubed or balled
1/2 cup crumbled feta cheese
1/4 cup fresh mint leaves, roughly chopped
Juice of 1 lime (about 2 tablespoons)
1 tablespoon olive oil
Fresh cracked black pepper, to taste
(Optional) 1/4 cup thinly sliced red onion or cucumber for extra crunch
(Optional) Balsamic glaze for drizzling
Instructions:
In a large bowl, combine the cubed watermelon, feta, and chopped mint.
Drizzle with lime juice and olive oil. Gently toss to coat.
Sprinkle with black pepper to taste.
Optional: Top with red onion, cucumber, or a light balsamic glaze drizzle.
